Did you just make a fresh salad and prepare dinner tonight? That’s great ! But what did you do with the leftover vegetables? Hope you didn’t throw them in the trash because you can reuse them. It’s impressive, isn’t it? ! But this time, we are not talking about composting, but about the method of “regrowing”, or in other words “how to grow back your vegetables”. It is the ideal solution for eco-friendly citizens, because it is not even necessary to have a garden for it. Keep reading to find out all the details of this zero waste idea.
What is “regrowing”?
Miracles are all around us and one of them is hidden in your refrigerator. If you don’t believe it, you should definitely try the so-called “regrowing” method. With over 10k Instagram posts, hundreds of videos, and even books, this method of growing vegetables is really gaining popularity.
It consists of multiplying fruits and vegetables from their remains.
This has multiple advantages:
- This will save you money by avoiding buying vegetables at the store.
- You can grow your own organic production.
- The method is suitable not only for gardens, but also for any apartment or balcony.
- You reduce the amount of food waste you generate at home.
- You don’t have to be an experienced gardener to be successful. This method is also ideal for beginners.
To be sure your plants will grow, make sure they are organic. Non-organic and GMO products are generally treated to prevent sprouting. Of course, if you don’t have a neighbor with a garden that can give you a high-quality, fresh vegetable, you have to spend a little more money on organic produce from the store. Our advice is to check the street markets first.
Once you’ve planted your “trash”, check how it grows. If after a week you don’t see anything happening, compost them and try again. Do not despair. It’s easy once you find a good quality product. Plus, it’s a great way to test whether your food source is good quality or not.
Always place the plants near a sunny window where they can get enough heat and light.
Which vegetable to regrow?
You actually have a huge selection – from herbs to vegetables, to tropical fruits like pineapples. But when you start growing them, consider the local climate. You can grow a plant like mango, but it will be a miracle if it produces fruit. On the other hand, you will be able to appreciate the green plant. If your goal is to produce your own fruit, opt for local products. Here are a few that are easy to grow from scraps.

Just like shallots, garlic and onions, onion can be repelled. They are perfect vegetables for urban agriculture. Simply take a small section from the base of a bulb or stem with the roots attached and place it in a shallow dish of water. The same technique can be used for spring onions. Of course, you can use a whole onion like in the photo above. Cut off the green parts and let them grow again.
If you plant them in soil, they will take much longer to grow.
Leeks regrow exactly the same way as green onions, except that it takes a little longer due to their size. Leave about two inches of leeks at the base, as shown above, and place them in a container of water.
Here’s how to plant carrots without seeds… In fact, in this specific case, you will not be growing a new carrot, but the top of the carrot. Did you know that these beautiful green leaves are edible? You can use them in a pesto, in salads, in soups or simply to garnish your dishes! So just leave the top part of the carrot in a dish of water and place it where it will get enough light.
Grow your vegetables: Lettuce
Lettuce is one of the most popular vegetables that are grown in hydroponic systems. It is therefore not surprising that you can grow salads in an apartment, without the need for soil. So all that is needed is to put a stalk of about 5 cm in a glass of water. The water should reach about the middle of the core. In two weeks the lettuce will send out roots and new leaves.
If you have lettuce in your garden, do not cut the entire plant. Just take the leaves. If you keep the stem, it will produce new leaves.
Grow your vegetables: Celery
Cut the celery, leaving approximately 3 cm from the base. Then place it in a bowl of water and leave it in a warm, sunny place. When new leaves start to grow in the middle, you can cut them to spice up your dishes. Another option is to let them grow for about a week and then transfer them to a pot of soil. That way, you’ll have whole celery, not just leaves.
