If you travel, you may already know salvage, this group which is already a hit in different countries from Colombia to Guatemala via Miami, Madrid or Barcelona and even Marbella, Milan and London soon. The concept ? Offer a spectacular and festive atmosphere while offering quality cuisine and clever cocktails. On the menu, high-end Japanese dishes but whose desire is to remain affordable.
At the house of salvagethe decoration is signed Lazaro Rosa-Violan to whom we already owe the superb Vesper in Paris. Here we dives in full jungle in a rather African atmosphere ascending Maya. At the controls, it is the world size Borja Goikoetxea who signs the card creative cocktails of the House. For Salvaje Paris, the renowned mixologist has imagined a menu savage. Lhe Borja Goikoetxea menu plays on three levels: French-style aperitifs, classic cocktails and signature cocktails.
Among the signature cocktails, stand out the Ukiyo (gin, white chocolate, citrus, cream and a mixture of flowers and yuzu), perfect to harmonize with the Dynamite Roll; the Rino (Japanese gin, umeshu, apple and passion fruit), presented in a replica of the golden rhinoceros, the house’s trademark, or the ikigai (citrus rum, roasted pineapple, sesame, lulo and passion fruit mousse).
Hand in hand with the chef Fermin Azkue, Borja Goikoetxea works his cocktails so that they can go well with the chef’s dishes.
